  • 2 slices of sourdough or gluten-free bread
  • 1 tablespoon of extra virgin olive oil
  • ½ an avocado, finely sliced
  • 2 eggs, poached
  • Lemon wedge
  • Salt and pepper to taste
  1. Toast the bread and then drizzle with some extra virgin olive oil
  2. Spread with the finely sliced avocado
  3. Top with poached egg
  4. Squeeze some lemon juice on top
  5. Season with salt and pepper
