  • ½ cup of chia seeds
  • 2 cups of almond milk or any milk of your choice
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of maple syrup, or any sweetener of your choice
  • Cinnamon powder, to serve
  • Kiwifruit and coconut for topping
  1. Place the chia seeds, milk, vanilla extract and maple syrup in a medium-sized bowl.
  2. Use a whisk to stir and combine all the ingredients
  3. Let the mixture stand for 5 minutes
  4. Then whisk again to remove any chia clumps that may have formed
  5. Place the bowl in the fridge for 1-2 hours or until the mixture has set
  6. Divide the chia mixture between 3 bowls and top with cinnamon powder, kiwifruit and coconut chips
Store the chia pudding in the fridge for up to 3 days
