Anzac Biscuits – gluten-free

Anzac biscuits are one of our favorite biscuits and it’s tradition in our house to have a big bake before Anzac day, so we can sit and watch the Anzac day parade with a nice cuppa and some Anzac biscuits. These are made with gluten-free flour BUT they do contain  rolled oats, so they are not entirely gluten-free. Oats contain avenin which is a protein similar to gluten, many coeliacs and people who are gluten -intolerant may be able to tolerate oats, others can’t.  If you know you are sensitive to oats you can substitute the rolled oats for a 100gms of quinoa flakes.

Serves: 15-18
  • 120gm of butter, melted
  • 145gms of rice malt syrup or of any sweetener of your choice
  • 1 teaspoon of baking soda
  • 100gm of rolled oats
  • 170gm of gluten-free flour
  • 75gm of shredded coconut
  1. Preheat the oven to 160 degrees Celsius
  2. Line a baking tray with baking paper
  3. Place the butter and rice malt syrup in a small saucepan over low heat and gently heat until melted
  4. Once melted remove from heat and stir in the baking soda
  5. Place the oats, flour, shredded coconut in a large bowl and give a big stir to combine all the ingredients
  6. Pour in the melted butter mixture
  7. Stir well until all the flour and oats are covered
  8. Roll tablespoons of the mixture on to the prepared trays, allowing space for spreading
  9. Gently press each ball to flatten slightly
  10. Bake for 10-15 minutes until golden brown
  11. Remove from oven and let cool for 5 minutes
  12. Transfer to wire rack and allow to cool completely
  13. Enjoy!
