The Caprese salad is both simple and delicious and is a great way to make use of extra tomatoes from a backyard crop or farmers market.  Make sure you use the freshest tomatoes available – you want them nice and firm so they layer up well. For added culinary flair, try different varieties such as heirloom, cherry or roma.  The combination of fresh tomatoes and basil brings a summer garden on a plate. Enjoy this Italian favourite on its own or with fresh sourdough, drizzled with extra virgin olive oil and balsamic vinegar.

  • Caprese salad
  • Serves 4
  • 2 large very ripe tomatoes
  • 350gms of buffalo mozzarella
  • Fresh basil leaves
  • Pinch of sea salt
  • Freshly ground pepper
  • 6 tablespoons of extra virgin olive oil or basil oil
  1. Finely slice the tomatoes
  2. Arrange on flat serving dish
  3. Sprinkle with salt
  4. Finely slice the mozzarella and place it over the tomatoes
  5. Drizzle with olive oil
  6. Season with salt and pepper
  7. Top with basil leaves
