You can’t go wrong with Rogan Josh.  The nice thing about cooking this dish is the amazing aroma of the herbs and spices that fill the house.  Fresh turmeric can sometimes be a tricky ingredient to find,  so you can substitute with organic turmeric powder.  This traditional Indian dish is full of flavour and like, all good curries is even better the next day. It also freezes well. Serve with steamed rice or either cauliflower rice or quinoa for a lighter version. Use coconut yogurt to taste if you’re looking for a dairy-free alternative.

Serves: 6
  • 1.2 kg of diced lamb shoulder
  • 3 tablespoons of ghee or coconut oil
  • 1 red onion
  • 2 fresh bay leaves
  • 1 cinnamon stick
  • 8 cloves
  • 10 green cardamom pods. Crushed
  • 1½ tablespoons of fennel seeds
  • 10 cm piece of ginger finely grated
  • 4 garlic cloves finely chopped
  • 1 teaspoon of finely grated, turmeric
  • or 2 teaspoons of ground turmeric
  • 2 tablespoons of ground coriander
  • 2 teaspoons ground ginger
  • 1x 400gm can of whole peeled tomatoes
  • 500ml of water
  • Salt flakes
  • Raita
  • ½ red onion, finely sliced
  • 2 handfuls of coriander leaves
  • juice of ½ lime
  • ½ cup of natural yogurt
  • Salt and pepper
  1. Add the olive oil to a large saucepan over medium heat – add the onion and saute’ for 5 minutes until translucent.
  2. Reduce heat to low and bay leaves, cloves, cardamom, and fennel seeds and fry for 2-3 minutes while stirring continuously
  3. Stir through the turmeric, garlic and ginger cook for another 1 minute
  4. Add ground the ground coriander, ground ginger and stir through
  5. Add the tomatoes, salt and pepper
  6. Add the lamb and stir to coat
  7. Add 500ml of water and bring to simmer.
  8. Cover the pan with a lid, reduce the heat on low and cook, stirring occasionally for 2 hours until meat is tender.
  9. Raita
  10. To make the raita mix all the ingredients together in a medium-sized bowl.
  11. To Serve-
  12. Divide the rogan josh into bowls and top with 2 tablespoons of raita, chili, and an extra coriander leaves.
