Vegan Chocolate Bark

Serves: 10-15
  • 2 packets of loving earth dark chocolate (72%) 80gm
  • 1 tablespoon of coconut oil
  • 1 tablespoon of rice malt syrup or any sweetener of your choice
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of fresh or frozen raspberries, cut in half
  • 3 tablespoons of macadamia nuts roughly chopped
  • 3 tablespoons of pistachios roughly chopped
  • 2 tablespoons of coconut flakes
  1. Line a baking tray with baking paper
  2. Bring a couple of centimeters of water to boil in a saucepan
  3. Place the dark chocolate, coconut oil, sweetener, and vanilla extract into a heatproof bowl (metal or glass) over a saucepan
  4. Stirring frequently until the chocolate has melted and coconut oil, rice malt syrup and vanilla extract are well combined and smooth.
  5. Pour the chocolate onto the baking paper and smooth out to a 1-2 cm thickness
  6. Top with raspberries, coconut flakes, and nuts
  7. Place the baking tray in the freezer for 2-3 hours to set
  8. Once it is set to break into chunks and eat
  9. Store the bark in a container in the freezer until ready to serve
