Orange Paleo Pancakes

These pancakes are Yum! Just yum! So, these are dairy and gluten free, are light and fluffy and taste AMAZING. If you’re organised you can make the batter up in advance and think about your fabulous brekkie or snack for the next however many hours. Or just make and eat straight away – we find it hard to wait as well : ). Serve the pancakes with coconut yogurt, oranges, walnuts and a sprinkle of cinnamon. Enjoy!!

Ingredients
  • ½ cup of tapioca flour
  • ½ cup of coconut flour
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of baking soda
  • ½ teaspoon of baking powder (gluten-free)
  • 1 tablespoon of honey or maple syrup
  • 3 large eggs
  • ½ cup of coconut milk
  • Juice of 1 orange
  • Zest of 1 orange finely grated
  • Pinch of fine sea salt
  • Toppings
  • 1 orange peeled and sliced into small segments, white pith removed
  • ¼ cup of walnuts
  • ½ cup of coconut oil
  • Honey or Maple syrup to serve
  • Ground cinnamon to serve
Instructions
  1. Whisk the eggs together in a bowl
  2. Whisk in the coconut milk, honey or maple syrup, orange juice and zest
  3. In a separate large bowl sift the tapioca flour, coconut flour, baking soda, baking powder, cinnamon powder and salt, mix well to combine
  4. Pour the wet ingredients into the dry ingredients, stirring continuously until well combined.
  5. Heat a teaspoon of coconut oil in a large frypan over medium heat.
  6. Once the coconut oil is melted ladle 80ml (1/3 cup) of batter into the pan and cook for 2-3 minutes, or until bubbles appear on the surface.
  7. Turn the pancakes over and cook for another minute or until the pancakes are a golden colour.
  8. Transfer to a plate and keep warm while cooking the rest of the pancakes.
  9. To serve
