Happy Saturday! Here’s what we will be having for Easter Breakfast tomorrow morning. This simple Easter egg chia pudding recipe is my healthy spin on a what will be a chocolate filled day. It’s creamy, slightly sweet and looks so decadent served in a chocolate Easter egg, topped with some chopped nuts, fruits and a little extra chocolate. It’s a sweet treat that everyone will love!

  • 1 large hallow dark chocolate egg, halved
  • ½ cup of chia seeds
  • 4 tablespoons of flaxseeds
  • 2 cups of coconut yogurt
  • 1 cup of fresh/frozen strawberries
  • 2 tablespoons of pistachios roughly chopped
  • 4 strawberries roughly chopped
  • Finely grated dark chocolate
  1. You need to start this recipe at least 4 hours before serving to give the chia pudding enough time to set.
  2. Place the chia seeds, coconut yogurt and the cup of strawberries in a food processor or high-speed blender. Then process or blend until it is all combined and has a smooth consistency.
  3. Pour the chia mixture into a bowl, stir in the flaxseeds and place it in the fridge to set.
  4. When you are ready to serve fill the two Easter egg halves with the chia pudding.
  5. Top with pistachios, strawberries and grated dark chocolate
  6. Enjoy!
