Vegan Chocolate Bark
I love all things chocolate especially homemade vegan chocolate treats, that’s also nutritious I used “Loving Earth” dark chocolate for this, feel free to use any vegan dark chocolate you like. If the chocolate is anything less than 70% dark chocolate, halve the amount of sweetener. This is so simple to make, I used frozen raspberries, they keep their shape and don’t go all mushy, you can try with fresh raspberries just be mindful that you need to be a little more gentle with them. Ingredients
- 2 packets of loving earth dark chocolate (72%) 80gm
- 1 tablespoon of coconut oil
- 1 tablespoon of rice malt syrup or any sweetener of your choice
- 1 teaspoon of vanilla extract
- 1 tablespoon of fresh or frozen raspberries, cut in half
- 3 tablespoons of macadamia nuts roughly chopped
- 3 tablespoons of pistachios roughly chopped
- 2 tablespoons of coconut flakes
Instructions
- Line a baking tray with baking paper
- Bring a couple of centimeters of water to boil in a saucepan
- Place the dark chocolate, coconut oil, sweetener, and vanilla extract into a heatproof bowl (metal or glass) over a saucepan
- Stirring frequently until the chocolate has melted and coconut oil, rice malt syrup and vanilla extract are well combined and smooth.
- Pour the chocolate onto the baking paper and smooth out to a 1-2 cm thickness
- Top with raspberries, coconut flakes, and nuts
- Place the baking tray in the freezer for 2-3 hours to set
- Once it is set to break into chunks and eat
- Store the bark in a container in the freezer until ready to serve
